Ingredients
2 tbsp. butter or coconut oil
2 cups chopped white onion
900 ml chicken broth (one brick)
4 cups cubed zucchini
2 large canned diced tomatoes
1 tbsp. fresh parsley, chopped fine
¼ tsp. oregano
½ tsp. basil
1 tsp. honey
1 tsp. fresh dill, or dried is ok too
½ tsp. celery salt
½. tsp. salt
Directions
Sauté onions in butter or coconut oil until soft and clear.
Add remaining ingredients.
Bring to a boil, cover and simmer for 20 minutes.
You can add some rice (uncooked) if you like. This makes about 10 cups and freezes well! (I usually double this recipe for a bigger family or leftovers!)
