Stay warm in this cold with this tasty soup!   

Ingredients

  • 2 tbsp. butter or coconut oil

  • 2 cups chopped white onion

  • 900 ml chicken broth (one brick)

  • 4 cups cubed zucchini

  • 2 large canned diced tomatoes

  • 1 tbsp. fresh parsley, chopped fine

  • ¼ tsp. oregano

  • ½ tsp. basil

  • 1 tsp. honey

  • 1 tsp. fresh dill, or dried is ok too

  • ½ tsp. celery salt

  • ½. tsp. salt

Directions

  • Sauté onions in butter or coconut oil until soft and clear.

  • Add remaining ingredients.

  • Bring to a boil, cover and simmer for 20 minutes.

  • You can add some rice (uncooked) if you like. This makes about 10 cups and freezes well! (I usually double this recipe for a bigger family or leftovers!)
