Perfect for summer, this colourful salad recipe features super tasty vegetables like cucumbers, tomatoes, purple onions, Kalmata olives and the amazing feta cheese, yum! Super nutritious, this salad is nutrient-dense containing vitamins A, C & K as well as potassium and folate. The olives contain healthy fats too! This salad is easy to make and great left over the next day as well!😊
Ingredients (Serves 8)
3 large cucumbers
10 Roma tomatoes
500 ml of Kalmata olives
1 purple onion
500 ml of feta cut in cubes
Dressing
1 large clove garlic, finely minced
2/3 cup extra-virgin olive oil
3 tbsp red wine vinegar
1 tbsp fresh squeezed lemon juice
½ tsp Dijon mustard
1 tsp dried oregano
½ tsp salt
Freshly ground black pepper
Directions
To assemble the salad: In your large serving bowl, combine the vegetables cut in large chunks.
Finally, drizzle dressing over the veggies an hour in advance and toss well. Cover and keep chilled until ready to serve! Easy!
